Easy Red Lentil Vegetable Soup
Ingredients
- 1 large onion medium dice
- 2 garlic cloves minced
- 2 celery medium dice
- 1-2 carrots medium dice
- Optional: additional vegetables including broccoli cauliflower, butternut squash
- 1 cup of red lentils washed
- 3-4 cups water or vegetable broth
- 3 ” kombu strip or 1 bay leaf
- 1 ½ tsp Herbamare herbal seasoning salt or ½ tsp salt
- 1 tsp. basil
- 1 tsp. oregano
- Garnish: chopped scallions greens such as spinach
Instructions

Saute onion in a little oil until soft. Add celery, carrots, additional vegetables and red lentils and saute another minute or two. Add water, bay leaf, basil, oregano and Herbemare. Bring to a boil, cover and reduce heat. Simmer for 25 minutes.
