Easy Red Lentil Vegetable Soup

Ingredients

  • 1 large onion medium dice
  • 2 garlic cloves minced
  • 2 celery medium dice
  • 1-2 carrots medium dice
  • Optional: additional vegetables including broccoli cauliflower, butternut squash
  • 1 cup of red lentils washed
  • 3-4 cups water or vegetable broth
  • 3 ” kombu strip or 1 bay leaf
  • 1 ½ tsp Herbamare herbal seasoning salt or ½ tsp salt
  • 1 tsp. basil
  • 1 tsp. oregano
  • Garnish: chopped scallions greens such as spinach

Instructions

  1. Saute onion in a little oil until soft. Add celery, carrots, additional vegetables and red lentils and saute another minute or two. Add water, bay leaf, basil, oregano and Herbemare. Bring to a boil, cover and reduce heat. Simmer for 25 minutes.
