Baked Salmon with Lemon and Thyme

Ingredients

  • 2 Tbsp extra-virgin olive oil divided
  • 4 six oz salmon fillets skin on
  • 1 Tbsp fresh thyme
  • -Zest of 1 lemon
  • Salt and freshly ground black pepper
  • Lemon wedges for serving

Instructions

  1. Preheat oven to 350 degrees. Oil a baking sheet with 1 Tbsp of oil and place salmonon it, skin side down. Mix the remaining olive oil with the thyrme and lemon zest and spread over the salmon fillets. Season with salt and pepper.
  2. Bake for 350 degrees for 20-25 minutes until just opaque in the center and the fish flakes apart easily when pressed.
  3. Serve with steamed spinach or other green.
