Kale Salad with Apple and Tahini dressing
Ingredients
Dressing
- 1 clove garlic crushed
- 2 tbsp. grated ginger
- 1/3 cup tahini stirred
- 2 Tbsp tamari
- 2 Tbsp. lemon juice
- Salt and freshly ground pepper
- 2 Tbsp. honey
- Water as needed, to desired thickness
- Olive oil as needed
- Salt and freshly ground pepper
Salad
- 6 cups of baby kale can substitute with Tuscan kale
- 1 apple
- ½ – 1 cup of broccoli sprouts or other sprouts
Instructions

Blend all of the dressing ingredients together until smooth, add water, if needed to thin. Adjust seasonings, adding oil, water, salt and pepper to taste.

Assemble the salad: tear the kale into bite-size pieces, toss until it is coated with dressing and set aside.

Core and slice the apple into thin slices. Add to the bowl of kale along with the sprouts and toss with a little more dressing. Adjust seasonings and serve.
